Strawberry Poundcake Recipe (High Protein, Sugar Free)

Looking for a quick breakfast on the go that is high in protein and sugar free? You must try this recipe for Strawberry Poundcake!


Ingredients

+2 mashed bananas

+2 eggs

+1c cottage cheese

+8 scoops Vanilla Protein Powder (I used SP Complete- Standard Process)

+1 c Strawberries for blending (plus a few to slice and place on top)

+2 c oats

+2 tsp baking powder

+1 tsp sea salt

 

Directions

Combine mashed bananas, eggs, cottage cheese, vanilla protein powder & 1 c strawberries and blend with a blender or immersion blender.

Once well blended, add oats, baking powder and sea salt and mix well.

Line an 8x8 inch baking pan with parchment paper. Add a little butter or coconut oil on the paper to prevent sticking. Pour the poundcake mix into the lined dish and top with fresh sliced strawberries. Bake at 350F for 25-35 mins or until nothing jiggles in the middle!
